Seriously though, it would be cool to see some of the old missions remastered.

Depends on how it's done. 

If they are willing to do a good career mode, with interesting locations (not just randomly generated) and the graphical goodies to make it worthwhile (like ground services and unloading), then that's preferable. 

If not, then missions make more sense. A career mode that's just a stats sheet for when you takeoff and land isn't going to hold the interest of the mainstream they will need to target. 

I think "A Role Playing" mode in the future could bring some extra dimension/people to the XBOX version / community?

Interacting with AI staff, crew, passengers as well as real players taking co-pilot roles for example and having their visible interactive avatar could be an added value in a future mode.
