I seem to only be able to add waytpoints. Is there a way to add airways?

Bump. I guess maybe I should interpret the silence as "no, there isn't an option for adding airways"?

I'm no expert, but I think an airway is defined as being between two waypoints.  So you would have to add those two instead.

In a real G5000, absolutely! In the sim...not so much 😒

Almost correct. An airway consists of many intersections/waypoints, and by adding the entry waypoint, the airway and the exit waypoint, you can effectively add a bunch of waypoints automatically, because your fmc/garmin unit will add all the waypoints along the airway between your entry and exit. Saves a bunch of time.
